A possible option for Catholics with celiac disease who want to take communion....
Got this article from the latest celiac.com newsletter. Apparently, there are now low-gluten wafers being made for Catholic communion....

My church, while not Catholic, does communion regularly. They use actual bread that is dipped into a communal cup, so I can not safely use either. Rather than having them use special bread and a separate cup, I opt to have a blessing instead, which is what they routinely give to young children as well.
